How a Vegetable Peeler Rewrote the Rules of Good Design
A ceramic artist's case for empathy-driven design, made on a student podcast, traces back to a kitchen peeler and forward into a fast-growing industry.

Good design usually starts with one person's pain, not a market opportunity. That was the throughline when Bangkok-based ceramic artist Tim Mills joined Students Incorporated, the student-produced podcast out of the International Community School of Bangkok (ICS Bangkok), for a conversation about what actually separates a well-designed object from a badly designed one, hosted by Mr. Jason with co-hosts Mia and Frank. The example Mills kept returning to was a kitchen peeler, and the story behind it explains more about where the design industry is headed than its size would suggest.
The Peeler That Started With One Aching Hand
Mills, introduced on air as "a well-known local artist" and a ceramicist who has spent decades working primarily in clay, told the co-hosts about the OXO Good Grips peeler: a rubber-handled kitchen tool whose founder built it after watching his wife struggle, in real pain, to hold a standard metal peeler. "That pushed him as a designer to think about how they could make a better product," Mills said. "It just shows, it's proof that even small improvements in design can make everyday tasks much easier."
The transcript doesn't name the founder, but the story checks out. OXO was started by Sam Farber after he watched his wife, Betsey, struggle with arthritis while trying to use a standard peeler on vacation; Farber worked with the design firm Smart Design to build a line of kitchen tools with thick, cushioned handles, and released the first Good Grips peeler in 1990, according to Fast Company's history of the product. The tool wasn't marketed as adaptive equipment for people with disabilities. It was sold as simply the better peeler, and it outsold the competition because it was more comfortable for everyone, not just Betsey Farber.
That distinction, designing for the hardest case and letting everyone benefit, has a name now: universal or inclusive design. And thirty-five years after the Good Grips peeler shipped, the market has caught up to the idea. More than 70 million American adults, over one in four, live with a disability, according to the American Society of Landscape Architects' universal design guide, and arthritis alone affects roughly 212 million people in Asia, 83 million in Europe, and 60 million in the United States, with cases projected to grow 40% by 2030, per industry research cited by Healthcare Packaging. The same research found that 86% of people living with arthritis, and 76% of consumers overall, say they're willing to pay more for products that are simply easier to use. What started as one company's response to one woman's hands has become a documented consumer preference with a price premium attached.
When Good Design Disappears
Mills's larger point was that good design is defined by its own invisibility. "A well-designed product should be intuitive," he said. "When a product is designed well, people don't even think about how they're using it. It just works." Bad design, by contrast, announces itself immediately: he pointed to hotel TV remotes as the object nearly everyone has fought with, so many buttons that "half the time you're turning the volume up or switching channels when you didn't mean to," while newer streaming remotes from Roku and Apple TV strip the interface down to a handful of functions.
Co-host Frank put the same idea more bluntly.
We take good design for granted until we come across something with bad design. And then it's all we can think about.
Mills traced that invisibility down to brand identity, using Nike, Apple, and Starbucks as examples of companies whose visual language is recognizable without a logotype in sight, just a swoosh, a silhouette, a color. He pointed to Apple's packaging specifically: people keep the boxes their phones came in, he said, because the intentionality behind the design is legible even in something most companies would treat as disposable. That's the emotional payoff of design done well, in his framing: trust and brand loyalty that get built box by box, interaction by interaction, long before a customer consciously notices any of it.
The Sustainability Trade-Off Nobody's Fully Solved
Asked about sustainability, Mills described a real tension rather than a solved problem. Companies are shifting toward recycled and upcycled materials, repairable parts, and products built to last instead of get replaced, he said, "but the challenge will always be, at least right now it is for sure, that you have to balance sustainability with cost and usability. Sometimes the most eco-friendly materials aren't the most practical or affordable." Co-host Mia offered her own small-scale example: refillable ink wells built into inkjet printers, which let owners buy bottles of ink instead of replacing entire cartridges, a shift that saves money and cuts down on plastic waste.
That tension is playing out in policy now, not just in product design. As of January 2026, more than a quarter of Americans live in a state with an active right-to-repair law covering electronics, according to the U.S. Public Interest Research Group, up from a scattering of states just a few years ago; Washington became one of the newest, after Governor Bob Ferguson signed a right-to-repair bill into law in May 2025, and Texas and Connecticut have laws taking effect later in 2026. The laws force manufacturers to sell replacement parts and repair manuals to consumers and independent shops, essentially mandating, by statute, the design principle Mills described as a matter of ethics: build things that can be fixed rather than replaced.
A Designer's Own Test Case
Mills's belief that design succeeds or fails on how well it understands the person using it wasn't just theoretical for him. He described his own senior thesis project, years earlier, as an attempt to combine two personal passions, clay and percussion, into a set of ceramic drums. Building them meant learning to weld tuning rings, source goat skin for drumheads, and stretch those heads over ceramic shells, skills well outside his training as a visual artist. The payoff came on opening night, when he invited the gallery crowd to pick up the drums and play them instead of just looking at them; small drum circles broke out around the space. "It was sort of this generative effort within the community to allow people to come together and to create music, to create art together," he said. The lesson he drew from it matches the one he drew from the OXO peeler: an object designed around how people actually want to use it does something a purely decorative one can't.
Where Design Goes From Here
Mills was optimistic, not anxious, about AI's role in his field. He described it as a tool that helps designers test ideas faster and personalize user experiences, pointing to interfaces that already adjust their own layouts based on the device or the person using them. He also brought up 3D printing, both in his own ceramics practice and in architecture, comparing a modern 3D-printed concrete building to "the log cabin as kind of like the early 3D printer, laying logs on top of each other layer by layer." That comparison undersells how fast the underlying industry is moving: the global 3D concrete printing market is projected to grow from $3.61 billion in 2025 to $5.39 billion in 2026, a 49.3% annual growth rate, according to a 2026 report from The Business Research Company, driven largely by residential housing projects. Construction firms using the technology report cutting labor requirements by nearly 40% and construction waste by 60 to 70%, per the same report, which is the kind of number that turns a novelty into standard practice.
None of that changes what Mills sees as design's actual job, which is still about people rather than tools. His closing advice to students was to look for the story behind a frustration before reaching for a solution. "When you observe something that is poorly designed, or you're frustrated or confused about something, ask yourself, how could this be better," he said. "And actually, maybe you're the one to set out to make it better." He offered his own gentle jab at Apple in the same breath, needling the company's remote for making users scroll through an on-screen alphabet to enter a password, evidence that even design's most celebrated practitioners still leave problems on the table for someone else to notice.
That's the thread connecting a 1990 peeler to a 2026 concrete printer: the good version of an object usually starts with someone paying close enough attention to notice that the existing version hurts, in ways literal or otherwise, and treating that as a problem worth solving rather than a cost of doing business.
